This salad is ridiculously easy—like, “I just rolled out of my lounge chair and need something fast before the next round of cornhole” easy! With just a few fresh ingredients, you get a dish that’s light, hydrating, and just fancy enough to impress your in-laws or your picky cousin who suddenly decided they’re a foodie.

You only need:

  • Measuring cups and spoons
  • Cutting board and knife
  • Small bowl and spoon
  • Medium bowl and a silicone spoon for mixing magic

Ingredients:

  • 4 cups watermelon, cut into 1-inch cubes
  • 1 tbsp olive oil
  • ½ tsp lemon juice
  • Salt and pepper, to taste
  • ¼ cup fresh mint, chopped
  • ⅓ cup crumbled feta cheese

Directions:

Cut up your watermelon and chop that fresh mint.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
