You know those recipes that just feel like home? This is one of them!
I grew up in a “chicken noodle soup fixes any malady” kind of family - sore throat? Chicken noodle. Bad day? Chicken noodle. Heartbroken? Yep… chicken noodle. But when Grandma really wanted to show us some love (or fill our bellies on a budget), she made this creamy, cozy chicken noodle casserole and called it “stick to your ribs” food. And she wasn’t wrong.

This version is my easy, weeknight spin on her classic. It’s got all the nostalgic flavors - tender chicken, soft egg noodles, mixed veggies, and that creamy, cheesy sauce, but with a buttery Ritz cracker topping that gets golden and crunchy in the oven. Chef’s kiss!
It’s the kind of dish that brings everyone to the table (even the picky eaters) and leaves no leftovers behind. Just pure, simple comfort in a 9x13.
Ingredients You’ll Need:
- 8 oz egg noodles, slightly undercooked (about 7 minutes)
- 2 cups cooked shredded chicken
- 2 cans (10.5 oz each) cream of chicken soup
- 1 ½ cups milk
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon pepper
- ¼ teaspoon salt
- 12 oz frozen mixed veggies, thawed
- 1 sleeve Ritz crackers, crushed
- 2 tablespoon butter, melted
- Chopped green onions, for garnish

Tools You’ll Need:
- Large mixing bowl
- 9x13 inch casserole dish
- Medium pot (for noodles)
- Measuring spoons & cups
- Foil (optional, if you want to cover while baking)
Directions:
Preheat your oven to 375°F and grease a 9x13 inch casserole dish.
Boil the noodles for 7 minutes - don’t overcook! They’ll finish in the oven.

In a large mixing bowl, combine the cream of chicken soup, milk, cheese, and all the seasonings. Stir until smooth and dreamy.

Fold in the noodles, shredded chicken, and thawed veggies. Mix gently but thoroughly.

Pour the mixture into your greased casserole dish and spread it evenly.

Crush the Ritz crackers and mix with the melted butter. Sprinkle over the top of the casserole.

Bake uncovered for 30 minutes, or until golden, bubbly, and smelling like heaven.

Sprinkle with chopped green onions, and serve hot!
