I love cake as much as the next gal, but in our house? Pie is the shizzy-wigg. (Yes, it’s a word. Yes, it’s a way of life!) My husband is a hardcore pie fan, so anytime we can sneak a flaky, fruity little treat onto the menu, he is all in. And these adorable mini strawberry pies? Let’s just say they vanish faster than you can say, “save one for me!”

These cutie-pie desserts are simple to make, ridiculously cute on a tray, and totally fuss-free. No slicing, no scooping, no fighting over who got the bigger piece - just grab-and-go goodness that’s loaded with sweet, juicy strawberries and tucked into golden, buttery crusts. You’ll feel like a bake sale champion even if you made them in your PJs!
They’re perfect for big family gatherings, summer parties, baby showers, or that one time you forgot to bring something to the potluck but still wanted to be the hero.
Ingredients You’ll Need:
- 2 packs refrigerated pie crusts, room temperature
- ¾ lb fresh strawberries, diced
- 2 tablespoon sugar
- 1 tablespoon cornstarch

Tools & Supplies:
- Cutting board + knife
- Small mixing bowl + spoon
- Mason jar lid or round cookie cutter (about 3.5–4 inches wide)
- Cupcake tin
- Cooking spray or a little butter for greasing
Let’s Bake Some Tiny Pie Magic!
1. Preheat that oven.
Set your oven to 400°F and lightly grease your cupcake tin so those little crusts pop out nice and easy later on.
2. Prep the filling.
Wash and dice your strawberries (after snacking on a few, of course). In a small bowl, mix them with the sugar and cornstarch. This combo gives you that luscious, jammy texture without turning your pies into soup.

3. Cut the crust.
Unroll your pie dough and use a mason jar lid or a circle cutter to make your crust rounds. You’ll want enough to fill the bottom and sides of each cupcake well - aim for about 12.

4. Fill 'em up.
Gently press each dough circle into a cupcake cavity. Then add a heaping spoonful of the strawberry filling to each one. Don't overfill - they’ll bubble up a little as they bake!

5. Bake to golden perfection.
Pop the tray in the oven and bake for 35 minutes, or until the crust is golden and the filling is bubbly. Your kitchen will smell incredible - don’t say I didn’t warn you.

6. Let them cool (a little).
Once they’re out of the oven, let them sit for about 10 minutes before removing from the pan. They’ll firm up a bit, which makes them easier to lift out without falling apart.
7. Optional glam moment: whipped cream!
Top with a little swirl of whipped cream, a dusting of powdered sugar, or even a tiny fresh strawberry slice if you're feeling fancy.

Tara’s Tips & Sweet Tricks:
- Make ahead magic: Bake these the night before a party and store loosely covered at room temp. Add whipped cream just before serving!
- Switch it up: Not a strawberry fan? Use raspberries, blueberries, or even a peach-cherry combo. The base works with any juicy fruit.
- Cutie pie toppers: Use leftover dough to cut out little hearts or stars to place on top before baking for that extra “aww!” factor.
- Feeling rustic? Let the filling bubble over a little - it makes them look even more homemade and inviting.
