If you've ever sat down at PF Chang's and ordered their famous lettuce wraps, you already know. There's something about that first bite - crisp, fresh, cool, and packed with flavor - that just hits differently. When my husband and I lived in Denver, PF Chang's was practically a date night staple! Then we moved to Florida, and the closest location may as well be on the moon.
So I did what any reasonable person does. I started making my own versions at home!

It worked out pretty well, actually - especially when my husband went on one of his low-carb kicks. (You know the kind. Suddenly every meal needs to be meat and vegetables and absolutely nothing fun... sigh) Around the same time, I was deep in my own Glucose Goddess phase, trying to keep my blood sugar from spiking all over the place. Lettuce wraps? Suddenly our love language.
The trick is making them feel like actual food and not just "man food" dressed up in a leaf. Enter: turkey, bacon, creamy mayo, colby jack, and buttery avocado all tucked into crisp romaine. These Mini Lettuce Wraps are my Florida answer to Denver date nights - and they've become a go-to in our house whether we're snacking, entertaining, or just trying to find that low-carb middle ground without losing our minds.
WHY YOU'LL LOVE THIS RECIPE
- Ready in 10 minutes flat - no cooking required (well, except the bacon, and we both know that's always worth it)
- Low-carb, keto-friendly, and glucose-goddess approved
- Perfect for parties, game day, or a light lunch that actually satisfies
- Easily customizable - swap the protein, change the cheese, add a little hot sauce
- No oven. No stove. No stress.
INGREDIENTS
- 4 romaine lettuce leaves
- ¼ cup mayonnaise
- 8 slices turkey lunchmeat
- 8 half slices of bacon, cooked
- 4 oz colby jack cheese, thinly sliced into 16 pieces
- Half an avocado, sliced into 8

TOOLS YOU'LL NEED
- Cutting board
- Knife
- Measuring cup
- Toothpicks
DIRECTIONS
Lay your romaine lettuce leaves flat on a cutting board. Spread mayonnaise evenly across each leaf - don't be shy, that's your flavor base.

Layer two slices of turkey lunchmeat onto each lettuce leaf.

Add two slices of colby jack cheese on top of each turkey slice. Then lay a half slice of cooked bacon over the cheese.

Top everything with two slices of avocado. (Yes, every single layer matters. Yes, it's worth it.)

Carefully roll the lettuce leaf around the fillings and secure with two toothpicks to hold it together.

Slice each roll in half and serve immediately.

Makes 8 mini lettuce wrap halves - serves 4 as an appetizer or 2 as a light lunch.

TARA'S TIPS
🥬 Romaine is your friend. The sturdy spine of a romaine leaf holds everything together without falling apart. Butter lettuce works too if you want something softer, but romaine gives you that satisfying crunch.
🥬 Cook your bacon ahead. Make a batch on the weekend and keep it in the fridge. These come together in literal minutes when the bacon is already done.
🥬 Avocado tip. Slice your avocado right before assembling so it stays fresh and doesn't brown. A tiny squeeze of lemon juice helps if you're prepping ahead.
🥬 Make it a party spread. Set everything out buffet style and let guests assemble their own. It's interactive, easy, and totally crowd-pleasing.
🥬 Spice it up. A little sriracha or your favorite hot sauce tucked in with the layers takes these from mild to memorable.
🥬 Swap the protein. Rotisserie chicken, ham, or even salami work beautifully here. Use what you have.
SERVING IDEAS
These Mini Lettuce Wraps shine on their own, but if you want to round out your spread:
- Pair them with my Keto Friendly Ranch Dip for a creamy dipping option that keeps everything low-carb.
- Serve alongside my Low Carb and Keto Crispy Air Fryer Kale Chips for that satisfying crunch factor.
- If you're building a full low-carb appetizer table, my Italian Sub Rollups are a must-add. Same handheld energy, different flavor profile - your guests will love having both.
STORAGE NOTES
These are best served fresh and assembled right before eating. If you need to prep ahead, keep all components stored separately in airtight containers in the refrigerator. Assemble just before serving for the best texture and freshness. Already-assembled wraps don't store well - the lettuce softens and the avocado browns, so plan to make them to order.
