Ingredients

These are the easiest cookies EVER! You just use a box of lemon cake mix and a few other ingredients that I am sure you have around the house!

• 1 (15.25 oz) box lemon cake mix: The foundation for your fluffy cookies.
• 1 (8 oz) container whipped topping: Gives the cookies that magical soft texture.
• 1 egg: Helps bind everything together for a nice cookie shape.
• ½ – ¾ cup powdered sugar: For the perfect sweet coating.

Equipment

Large bowl, silicone spoon, medium cookie scoop, small bowl or plate, parchment paper, baking sheet, cookie spatula, wire cooling rack.

Preheat: Let your oven warm up to 350 degrees F.

Combine: Toss the cake mix, whipped topping, and egg into a large bowl.

Stir: Mix it until you've got a delicious cookie dough.

Chill: Pop the dough in the fridge for 10 minutes. This makes it less sticky and easier to work with.

Sugar time: Pour powdered sugar into a bowl or plate. Use a cookie scoop to make cookie dough balls, roll them in the sugar and place them on a parchment-lined cookie sheet, leaving 1-2 inches between them. (these are sometimes called lemon crinkle cookies because of the gaps in the powdered sugar)

Bake: Bake for 8-10 minutes or until the edges are set. Remember, they'll continue to firm up when cool.

Cool & Enjoy: Carefully transfer the cookies to a wire rack to cool.

Storage Tips

Keep those delicious cookies fresh by storing them in an airtight container at room temperature for a few days.

Customize The Easy Lemon Cake Mix Cookies

While lemon desserts are my favorite, there are a bunch of different ways that you can make these cookies in different ways!

You don't have to stick to lemon cake mix, you can do these cookies with any kind of cake mix to your taste! The key is the whipped topping which makes the cookies light and fluffy!

If you want to make lemon cookies but only have yellow cake mix you can add lemon extract to get close, you just won't have the yellow color!

Want more bright lemon flavor? Add a lemon glaze using 1 cup of powdered sugar and 2-3 tablespoons of lemon juice! You can use either bottled lemon juice or fresh lemon juice.

Add lemon zest to the cookie dough (I LOVED that, the girls not so much… “too lemony Grandberry” so maybe skip if you are serving to kids!)

If you are feeling fancy you can add a teaspoon of vanilla to the dough to smooth out the flavor of these delicious lemon cookies!

I am not a chocolate gal, but if you want to add some chips, you could add white chocolate chips to this recipe!
