- 2–3 tablespoon blue cheese dressing
- 1 green onion, diced

How to Make Buffalo Chicken Potato Skins:
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Poke holes in each potato with a fork (get stabby with it!), brush with olive oil, and sprinkle with salt.

Bake for 1 hour until soft and golden. Then let them cool for 5–10 minutes so you don’t burn your fingertips off!
Slice the potatoes in half lengthwise and place cut-side down on the baking sheet. Broil for 2–4 minutes until the skin gets nice and crispy.

Flip the potatoes over. Scoop out the center with a small spoon, leaving about ¼ inch of potato around the edges and bottom to hold all the goodness.
In a bowl, mix shredded chicken with buffalo wing sauce until coated.

Spoon the buffalo chicken into each potato skin and top with shredded cheddar cheese.

Return to the oven and bake at 400°F for 10 minutes, or until cheese is melted and bubbly.

Remove from oven and drizzle with blue cheese dressing. Sprinkle with green onions for that fresh little zing!

- Remove the potatoes from the oven, and top with blue cheese dressing and green onions.
