Ingredients
- The Meat: 1 lb of Italian sausage. You know I love that spicy kick!
- The Sauce: A 14.5 oz can of diced tomatoes, a 24 oz can of your favorite pasta sauce, and 2 cloves of minced garlic.
- The Flavor: 2 tbsp of my go-to Italian seasoning blend.
- The Broth: 32 oz of beef broth. If you like your soup a bit thinner, go for 48 oz.
- The Noodles: 10 lasagna noodles, broken into smaller pieces.
- The Cheesy Goodness: 1 cup of ricotta cheese and ⅓ cup of parmesan cheese.
- The Freshness: 1 tbsp of chopped fresh basil.
Directions
First, brown that Italian sausage in a Dutch oven over medium heat. Get those flavors going!
Next, toss in the diced tomatoes, pasta sauce, Italian seasoning, minced garlic, and beef broth. Give it a good stir.
Bring that beautiful mixture to a boil, then break up your lasagna noodles and add them to the pot.
Turn the heat down to medium-low and let it simmer until those noodles are nice and tender (about 15 minutes).

- 14.5 oz can diced tomatoes
- 24 oz can pasta sauce

- 2 tbsp italian seasoning blend
- 32 oz beef broth (48 oz if you want a thinner soup)
- 10 lasagna noodles, broken into small pieces
- 1 cup ricotta cheese
- ⅓ cup parmesan cheese
- 1 tbsp fresh basil, chopped
Instructions
- Cook the italian sausage over medium heat in a dutch oven.
- Stir in diced tomatoes, pasta sauce, italian seasoning, minced garlic, and broth.
- Bring the soup to a boil, and break the noodles and add them into the pot.
- Continue cooking on medium-low heat until the noodles are tender. (about 15 minutes)
- Combine ricotta and parmesan in a small bowl.
- Chop the parsley.
- Serve the soup with a dollop of cheese mixture and sprinkle of fresh parsley. (Use a cookie or ice cream scoop to make the dollop of cheese look prettier.)
