t's crazy how something so simple can be so incredibly delicious. Basically, I took all the best parts of my lasagna and turned it into a hearty, comforting soup. And let me tell you, it's a game-changer.

Ingredients

  • The Meat: 1 lb of Italian sausage. You know I love that spicy kick!
  • The Sauce: A 14.5 oz can of diced tomatoes, a 24 oz can of your favorite pasta sauce, and 2 cloves of minced garlic.
  • The Flavor: 2 tbsp of my go-to Italian seasoning blend.
  • The Broth: 32 oz of beef broth. If you like your soup a bit thinner, go for 48 oz.
  • The Noodles: 10 lasagna noodles, broken into smaller pieces.
  • The Cheesy Goodness: 1 cup of ricotta cheese and ⅓ cup of parmesan cheese.
  • The Freshness: 1 tbsp of chopped fresh basil.

Directions

First, brown that Italian sausage in a Dutch oven over medium heat. Get those flavors going!

  • 1 lb italian sausage
  • 14.5 oz can diced tomatoes
  • 24 oz can pasta sauce
  • 2 cloves garlic, minced
  • 2 tbsp italian seasoning blend
  • 32 oz beef broth (48 oz if you want a thinner soup)
  • 10 lasagna noodles, broken into small pieces
  • 1 cup ricotta cheese
  • ⅓ cup parmesan cheese
  • 1 tbsp fresh basil, chopped

Instructions

  1. Cook the italian sausage over medium heat in a dutch oven.
  2. Stir in diced tomatoes, pasta sauce, italian seasoning, minced garlic, and broth.
  3. Bring the soup to a boil, and break the noodles and add them into the pot.
  4. Continue cooking on medium-low heat until the noodles are tender. (about 15 minutes)
  5. Combine  ricotta and parmesan in a small bowl. 
  6. Chop the parsley.
  7. Serve the soup with a dollop of cheese mixture and sprinkle of fresh parsley. (Use a cookie or ice cream scoop to make the dollop of cheese look prettier.)
  8. Italian bread or cheese garlic bread is perfect to serve alongside this soup for a complete hearty meal.
