Every year, right around Halloween, my Mom turned our kitchen into a Christmas cookie factory. While other moms were still picking candy corn out of the couch cushions, mine was creaming butter and sugar and lining up tins.
Mom had one non-negotiable rule for Christmas cookies: they had to freeze. If a recipe couldn’t survive a few weeks in deep storage, it didn’t make the cut. And she had a lot of deep storage. Not just the freezer, but our garage!

If you didn’t grow up in Northwest Pennsylvania, let me explain. Up there, your garage was a freezer. I remember the snow plow carving a tunnel to our back door that had to be 10 feet high. (I swear there was more snow when I was a youngun. And yes, we walked to school in it. Both ways. Uphill. 😆) Those tins of cookies sat out there all of December, perfectly chilled, just waiting for Christmas.
I still have Mom’s recipe box. I inherited it in 1996, and it’s full of handwritten cards and recipes clipped from magazines and newspapers. These Cranberry Orange Pecan Pie Bars are exactly the kind of recipe that would have earned a spot in it. They’re festive and easy, they slice into 24 neat squares, and, most important, they freeze like a dream. Mom would have approved.
Think of them as pecan pie’s cheerful holiday cousin. A buttery brown sugar shortbread crust gets topped with a chewy pecan filling, tart fresh cranberries, and bright orange zest. Bonus: there’s no corn syrup required.
Why You’ll Love These Cranberry Orange Pecan Pie Bars
- No corn syrup. The chewy topping uses plain old sugar, eggs, milk, and vanilla. These are pantry staples you probably already have.
- No rolling pin. The shortbread crust gets pressed right into the pan. No pie crust drama.
- One pan, 24 bars. They’re perfect for cookie trays, potlucks, church socials, and office parties.
- Freezer-friendly. Bake them in November and pull them out in December. Mom-approved make-ahead baking.
- Festive without fuss. Ruby red cranberries and flecks of orange make these look fancy, but they’re 11 simple ingredients. That’s Sparkle Without the Splurge in bar form.
Ingredients
For the Crust:
- ½ cup unsalted butter, softened
- ⅓ cup light brown sugar, firmly packed
- 1 ⅓ cups all-purpose flour
- ¼ teaspoon salt
For the Topping:
- 1 ¼ cups sugar
- 2 tablespoons flour
- 2 eggs
- 2 tablespoons milk
- 1–2 tablespoons fresh orange zest
- 1 teaspoon vanilla
- 1 cup chopped pecans
- 1 cup chopped fresh cranberries

Servings: 24 bars
Prep Time: 10 minutes
Cook Time: 35 minutes
Cooling Time: 1–2 hours
Tools You’ll Need
- Cutting board and knife
- Zester or grater
- Measuring cups and spoons
- 9x13-inch baking pan
- Parchment paper
- Electric mixer
- Large bowl
- Whisk
- Silicone spoon or spatula
Directions
For the Crust:
Preheat the oven to 350°F. Line a 9x13-inch baking pan with parchment paper, leaving the excess hanging over the sides. This makes it easy to lift the bars out later.
Beat the butter and brown sugar with an electric mixer until creamy. Mix in the flour and salt until crumbly.

Press the mixture evenly across the bottom of the pan.

Bake for 15 minutes.
For the Topping:
While the crust bakes, chop the cranberries and zest the orange.

In a large bowl, whisk together the sugar, flour, eggs, milk, orange zest, and vanilla until combined.

Stir in the pecans and cranberries.

When the crust is done, pour the topping over it and spread it evenly with a silicone spoon.

Bake for another 20 minutes, until the edges are golden.

Cool completely, 1–2 hours, before lifting out and cutting into 24 bars.

Tara’s Tips
- Zest before you juice. Use a good microplane zester and only grab the bright orange layer. The white pith underneath is bitter.
- Chop cranberries the easy way. Pulse them a few times in a mini food chopper instead of chasing them around the cutting board. They roll!
- make lifting the whole slab out a breeze, and you get cleaner cuts.
- Cut cold for neat squares. For bakery-sharp edges, chill the cooled bars for 30 minutes and use a sharp knife wiped clean between cuts.
- Fresh or frozen cranberries work. Toss frozen ones in still frozen. Chopping them while firm is actually easier.
- Go bite-size for parties. Cut them into 48 smaller squares and they become no-fork finger desserts.

Storage Notes
- Room temperature: Store in an airtight container for 1–2 days.
- Refrigerator: Keep covered for up to 5 days. Bring to room temperature before serving for the best chewy texture.
- Freezer: This is the Mom-approved part! Freeze the cooled bars in a single layer until firm. Then stack them between sheets of parchment in an airtight container or freezer bag for up to 3 months. Thaw on the counter for about an hour.
- Northwest Pennsylvania garage: Optional, weather permitting. 😆
