  • ¼ cup (1 stick) butter, softened to room temperature
  • 1 ¾ cup powdered sugar
  • 4 strawberries, sliced
  • Measuring cups and spoons
  • Frosting tip (I used this one from Amazon)
  • Stand mixer or medium bowl and hand mixer
  • Piping bag (you can use a plastic bag with a hole cut in the corner if you don't have a piping bag!)
  • Cutting board
  • Knife

Let's Get Started!

Prep the Strawberries: First things first, slice and puree your strawberries. A food processor works great for this, but you can also use a blender or even mash them by hand if you're feeling old-school.

Create the Sprinkle Surprise: Now for the fun part! Use your frosting tip to carefully cut out the center of each cupcake. Fill the hole with sprinkles, then gently place the top of the cupcake back on, pressing down lightly.

Whip Up the Strawberry Buttercream: In the bowl of an electric mixer (or a medium bowl if you're using a hand mixer), beat the butter and pureed strawberries on high until they're light and fluffy.

Add the Sweetness: Gradually add half of the powdered sugar, mixing on low speed, then increase to medium speed. Repeat with the remaining powdered sugar, finishing on high speed until the frosting is smooth and creamy.

Frost and Decorate: Fit your piping bag with the same frosting tip you used earlier and fill it with the buttercream strawberry frosting. Pipe the frosting onto each cupcake in a circular motion, starting from the outside and working your way towards the center. Top each cupcake with a sliced strawberry.

Ingredients

  • 12 strawberry cupcakes
  • ¼ cup sprinkles
  • 3-4 tbsp pureed strawberries (about ½ cup diced strawberries)
  • ¼ cup (1 stick) butter, softened to room temperature
  • 1 ¾ cup powdered sugar
  • 4 strawberries, sliced

Instructions

  1. Slice and puree your strawberries. You can puree them in a food processor.
  2. Use the frosting tip to cut out the center of each cupcake, then fill with sprinkles, and put the top of the center that you took out back into the cupcake, gently pushing down on it.
  3. Add the cutter and pureed strawberries to the bowl of a mixer (or medium bowl), and beat on high until creamy.
  4. Add half the powdered sugar and mix in on low, then switch to medium. Repeat for the remainder of the powdered sugar, switching to high at the end.
  5. Add frosting to a piping bag equipped with the tip that you used in step 2, and pipe frosting onto the cupcakes in a circular motion, starting from one side, around the cupcake and meeting the end, then moving into the center and stopping.
  6. Gently push a sliced strawberry onto the top of the frosted cupcake.
