Every football Sunday, Johnny turned our tailgate spot into a full-blown production. Coolers, folding tables, the good grill - the man does not do things halfway when the Bucs are playing. He'd have half the parking lot wandering over just to see what he was cooking up, because Johnny J does not put out a sad tailgate!

And out of everything on that table - the ribs, the wings, the sides he fussed over for hours - this dip was always the first thing to go. Every single time. I'd watch people circle back for "just one more scoop" until the dish was scraped clean, long before anything else was even half gone. That's how I knew this recipe had earned its permanent spot in the rotation.
It's ridiculously easy, which is exactly why it became a tailgate staple. You mix it, you bake it, and it comes out of the oven bubbly, creamy, and packing just the right amount of buffalo heat. No fuss, no fancy technique - just a dip that disappears fast for a good reason.
Why You'll Love This Recipe
- Ready in 30 minutes - mix it, bake it, done. No babysitting a slow cooker all day.
- Big, bold buffalo flavor - creamy on the inside with a little kick that doesn't overpower.

- Simple pantry ingredients - nothing fancy, nothing you can't find at a regular grocery store.
- Make-ahead friendly - mix it the night before and pop it in the oven when guests arrive.

Garnish and serve. Remove from the oven and top with diced green onion before serving.
Tara's Tips
- Rotisserie chicken is a great shortcut here if you're short on time - shred it up and skip the extra cooking step.
- For a milder dip, cut the buffalo sauce back slightly and add more after baking so everyone can adjust their own heat level.
- A hand mixer makes shredding chicken almost effortless if you don't want to do it by hand.
- A silicone baking dish makes cleanup so much easier - no scrubbing baked-on cheese.
- Keep a good set of mixing bowls on hand - you'll use them for every dip and casserole in this house!
Serving Suggestions
This dip is best served warm, straight out of the oven, with plenty of dippers on hand - tortilla chips, celery sticks, carrot sticks, or crackers all work great. It also pairs perfectly with Watermelon Prosciutto Skewers or Tortellini Antipasto Skewers if you're building out a full party spread, or serve it alongside 12 Fancy Summer Appetizers for a game day table that has a little something for everyone!
Storage Notes
Store any leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, warm in the oven at 350°F until heated through, or microwave in short bursts, stirring in between. This dip doesn't freeze particularly well due to the cream cheese and sour cream, so it's best enjoyed fresh or within a few days.
