St. Patrick's Day Cookie Baking Instructions (the full printable recipe card is below!)
Start by preheating your oven to 350 degrees and lining a baking sheet with parchment paper.
In a large bowl or the bowl of your stand mixer, combine the grocery store cake mix, oil, and eggs, using a silicone spatula to mix everything thoroughly.
Grab a cookie scoop to form even mounds of cookie dough balls.
Dip the top of each mound into your St. Patrick's Day sprinkles, and place them onto your prepared baking sheet. Make sure to leave about 2 inches of space between each cookie.
Transfer the baking sheet to the oven and bake cookies for 8-10 minutes, or until they are done. Once out of the oven, immediately press a Hershey's Kiss into the center of each cookie, then transfer the St. Patrick's Day cookies to a wire rack to cool completely to room temperature. Store in an airtight container!

Why I Love This Recipe
Besides the amazing flavor, I adore how simple this is. If you're looking for an easy St. Patrick's Day dessert to make, even with the kids, this is it! There's no complicated measuring or fancy dough-making required. Plus, the chocolatey base and sprinkle coating are a perfect blank slate to let your St. Patrick's Day creativity shine.
Think about using a mix of green, white, and gold sprinkles for a pop of different colors. Or, if you prefer another candy, try green M&Ms, mint chocolate chips, or even a drizzle of white chocolate instead of the Kisses.
However you make them, these cookies are bound to be your new good luck charm this St. Patrick's Day!
St. Patrick's Day Cookies Tips and Ideas
I know that I sometimes need a wee bit of inspiration to actually get cooking, so here are some of my best tips and ideas for making these cookies even easier and fun to make!
Mixing The Cake Mix
I like to use either a hand mixer or stand mixer for this recipe… for two reasons. First off, when I am making them with my grand kids, that keeps things fast and easy since they aren't allowed to touch the electric mixer. Second off I can eat the cake mix off the mixer paddles (I, for sure, don't give the grands these… their Mom would have a fit if I let them eat raw eggs so I sneak!)
Mixing Your Accouterments
One easy way your kids or grands can “help” is by letting them mix up the extra sprinkles or other bits you are going to add to the top of the cookies in a small bowl. My granddaughter insisted we add green M&M to the cookies because she had M&M cookies at my Dad's house!
St. Patrick's Day Cookies Wrapup
I had a blast making these St. Patricks day desserts with my middle daughter and my grandkids. They were such a fast and easy dessert… a big bang for a little buck… the boxed cake mix was just hanging out in my pantry waiting to come have fun with us!
