You know how much I LOVE French toast, right? I mean, it's basically the breakfast version of dessert and I am so here for that! But this Raspberry Cheesecake French Toast Casserole? Woman, it's a whole new level of yum!
Imagine soft, custardy bread baked to perfection, little pockets of creamy cheesecake, and bursts of tart raspberries all wrapped up in one rich, decadent dish. Yes. Please!
This is my go-to when I need something easy but impressive for brunch - whether it’s Easter, Mother’s Day, or just because I want to show off a little at the breakfast table. And the best part? You can make it ahead of time! Just pop it in the fridge overnight and bake it up fresh in the morning while you sip your coffee in fuzzy socks. Living the dream.
Here’s what you’ll need to make it happen:
Ingredients:
- 1 loaf French bread, cut into 1-2 inch cubes
- 8 oz cream cheese, softened
- 2 tablespoon sugar
- 6 oz raspberries
- 6 large eggs
- 3 cups milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon

You’ll also need: Measuring cups and spoons, bread knife, cutting board, large bowl, whisk, small bowl, electric mixer, spoon, and a 9x13 inch casserole dish
Directions:
First things first - cut your bread into chunky, rustic cubes (1-2 inches is perfect)

Grease up that 9x13 inch casserole dish like you mean it!
Toss the bread cubes into the dish and spread them out nice and even.
In a small bowl, beat the softened cream cheese and sugar together with an electric mixer until it’s smooth and creamy. Drop little spoonfuls all over the bread - don’t worry about perfection here.

Scatter those juicy raspberries all over the top.

In a large bowl, whisk together the eggs, milk, vanilla, and cinnamon. Pour this dreamy custard mix evenly over the bread, soaking every last bit.

Cover with saran wrap and refrigerate for at least 30 minutes, or let it hang out overnight if you're prepping ahead.

When you're ready to bake, preheat your oven to 375 degrees and bake for about 40 minutes. Stick a toothpick in the center - if it comes out clean, you're good to go! If not, give it another 5-10 minutes.
