If you’ve got a soft spot for pink, sparkle, and sugar… girl, same. These Valentine’s Truffles are a total dream come true - sweet, creamy, no baking required, and rolled in sparkly sanding sugar that looks like it was hand-delivered by Cupid himself!

They also happen to be my pink-loving granddaughter’s absolute favorite - and let me tell you, she’s got a whole coquettecore aesthetic going on that rivals Pinterest itself. These truffles are basically her love language in dessert form. Soft, pretty, just the right amount of extra, and SO easy to make with just three ingredients!
Whether you’re whipping them up for a Galentine’s Day gathering, class party, bridal shower, or just for your favorite little glam girl, these no-bake cake mix truffles are the sweetest way to say “I heart you.”
Ingredients You’ll Need:
- 1 (13.25 oz) box strawberry cake mix
- 1 (8 oz) block cream cheese, softened
- Pink and red sanding sugar (or any sprinkle blend your heart desires)

Tools & Supplies:
- Medium bowl
- Large bowl
- Electric mixer
- Spoon or cookie scoop
- Parchment paper
- Baking sheet
- Small bowls or plates for the sanding sugar
How to Make the Magic:
Heat treat the cake mix – Pour the dry cake mix into a medium microwave-safe bowl and heat in 30-second increments, stirring between each, until it reaches 165°F. This makes it safe to eat raw!
Whip the cream cheese – In a large bowl, beat the cream cheese with an electric mixer until it’s light, fluffy, and dreamy.

Make the dough – Add the heat-treated cake mix to the cream cheese a little at a time, beating until you get a soft, smooth dough.
Chill time! Pop the dough in the fridge for 1 hour to firm up.

Shape and roll – Scoop the chilled dough into 2-inch balls and roll each one in your pink and red sanding sugar.

Final chill – Place the truffles on a parchment-lined baking sheet and chill for another hour, or until ready to serve.

Tara’s Tips:
- Switch up the cake mix - red velvet or chocolate would also be delish!
- Use heart-shaped sprinkles for extra Valentine vibes.
- Store in the fridge in an airtight container - if you somehow don’t eat them all at once.
When to Serve:
- Galentine’s Day brunch
- Valentine’s class party
- Bridal shower dessert table
- Fancy tea parties with your grandbabies
- Or anytime you need a little pink sparkle in your life!
