Easter Bird’s Nest Cookies – Easy No Bake 

I LOVE making these Birds Nest (or haystack cookies)! I can remember when my Mom made these as Christmas cookies, but the fun addition of the little Cadbury eggs makes these so sweet and special!

Easter season is upon us, and that means it's time for adorable treats, pastel colors, and of course – chocolate!

As a kid, haystack cookies were always an Easter staple, but now I love making Easter Bird's Nest Cookies with my grand kids. These take those delicious cookies and give them a delightful Easter twist with the addition of Cadbury Mini Eggs!

These bird nest cookies are so easy to make that you can even get the kids involved. With just a few ingredients – a bag of crispy chow mein noodles, melted chocolate, and those yummy little Cadbury eggs – you'll have cute treats ready in a snap.

How To Make Easter Nests (printable recipe below!)

I love how easy these no-bake cookies are to make! It is such a fun treat to make for your kids or grand kids, the little nests are such a fun Easter cookies project!

Ingredients

Gather your ingredients… you'll need 1 cup semi-sweet chocolate chips, 1 cup butterscotch chips, 1 (5 ounce) can chow mein noodles (broken up slightly for easier handling), and 36 Cadbury Mini Chocolate Candy Eggs

Make The Little Nests

Grease 12 holes of a muffin tin or a silicone muffin pan. Add chocolate and butterscotch chips to a large heat-safe bowl over a saucepan filled with an inch of water, or double boiler, and melt over low heat, stirring constantly until smooth and completely melted.

Remove from the heat and stir in chow mein noodles. (if you find the mixture too sticky, let it cool slightly before forming the nests)

Divide the mixture between the 12 greased muffin tin cavities, and make a “nest” shape in the center of each by pressing an indentation.

Add a few candy eggs to each nest, and refrigerate for at least 1 hour to allow the chocolate to set completely.

Storage

You can store them in an airtight container for a few days once they get to room temperature!

Ingredients

  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips

  • 36 Cadbury Mini Eggs

Instructions

  1. Grease 12 cavities of a muffin tin.
  2. Add chocolate and butterscotch to a heat safe bowl over a saucepan filled with an inch of water, or double boiler, and melt over low heat, stirring constantly until smooth and completely melted..
  3. Remove from the heat and stir in chow mein noodles. 
  4. Divide the mixture between the 12 greased muffin tin cavities, and make a “nest” in the center.
  5. Add candy eggs, and refrigerate for 1 hour to set.

Customize Your Cookies!

The great thing about these Easter treats is that you can easily customize them!

Change Out Your Chips

You can use all different kinds of chips to suit your taste! Instead of semi-sweet chocolate chips you can use milk chocolate chips or even dark chocolate chips!

Change Out Your Sticks

While it is normal to use chow mein noodles I have swapped out pretzel sticks instead to make the birds nest cookies. Remember to break them up a little bit so they aren't too long!

Change Out Your “Eggs”

If you can't find Cadbury eggs, for sure you could use jelly beans in your little nests instead!

Get Creative With Bird's Nest Cookies

Add some green food coloring to shredded coconut and sprinkle it around the nests like “grass.”
